This cake gets its name partly because of the booze in it, but mostly because it looks like a slightly drunk person put the layers together. Despite my inability to make a perfect layer cake, I still really wanted to share this recipe with you. I was so happy with the way the flavour turned out, it tasted exactly as I hoped – just like a tiramisu, but in giant cake form!

The cake consists of really moist coffee sponge, that’s brushed with a coffee and alcohol glaze and filled with lashings of mascarpone cream, then dusted with cocoa powder. If you love tiramisu/ or love someone that loves tiramisu, you should definitely make this cake!

Fudgy chocolate cupcakes topped with a luxurious chocolate fudge frosting ~

Ingredients –

For the cupcakes –
100g/ 3 1/2 oz dark chocolate, broken into small pieces
50g/ 2oz/ 1/2 stick unsalted butter, at room temperature
120g/ 4oz/ 3/4 cup soft light brown sugar
1 egg
120g/ 4oz/ 3/4 cup plain flour
1 1/2 tsp baking powder
pinch salt
1 tsp vanilla extract
100ml/ 1/2 cup buttermilk

For the icing –
100g/ 3 1/2 oz dark chocolate
60g/ 2oz/ 1/2 stick unsalted butter
175g/ 6oz 1 1/4 cup icing sugar/ powdered sugar
50ml/ 1/4 cup whole milk

makes approx 6 cupcakes

Mini Strawberries and Cream Layer Cakes | Blueberry Kitchen

Vanilla sponge cake filled with chantilly cream and fresh strawberries ~

These mini layer cakes are perfectly proportioned for two and are pretty easy and quick to make (they also taste totally delicious!) You start off with a simple vanilla sponge recipe cooked in a one layer cake tin. Then simply cut the sponge into circles (I used the bottom of a shot glass) and fill with freshly whipped vanilla cream and sliced strawberries. Any left over bits of sponge could be used to make mini trifles (recipe coming soon!)
