Mini Strawberries and Cream Layer Cakes for two

Vanilla sponge cake filled with chantilly cream and fresh strawberries ~

These mini layer cakes are perfectly proportioned for two and are pretty easy and quick to make (they also taste totally delicious!) You start off with a simple vanilla sponge recipe cooked in a one layer cake tin. Then simply cut the sponge into circles (I used the bottom of a shot glass) and fill with freshly whipped vanilla cream and sliced strawberries. Any left over bits of sponge could be used to make mini trifles (recipe coming soon!)

  2. I’m a lover of plain cakes so rich and creamy is too much for me. I love how your tea cups and saucers nonetheless – everything looks super inviting.

  3. I love the combination of strawberries and cream–It’s one of my favorite desserts. Sponge cake makes it that much better, and yours are simply gorgeous. I can’t wait until we get decent strawberries out here!
