Mini Strawberries and Cream Layer Cakes | Blueberry Kitchen

Vanilla sponge cake filled with chantilly cream and fresh strawberries ~

These mini layer cakes are perfectly proportioned for two and are pretty easy and quick to make (they also taste totally delicious!) You start off with a simple vanilla sponge recipe cooked in a one layer cake tin. Then simply cut the sponge into circles (I used the bottom of a shot glass) and fill with freshly whipped vanilla cream and sliced strawberries. Any left over bits of sponge could be used to make mini trifles (recipe coming soon!)

Ingredients –
for the cake –
40g/ 1 1/2oz/ 1/3 stick unsalted butter, at room temperature
120g/ 4 oz/ 3/4 cup sugar
1 egg
120g/ 4oz/ 3/4 cup flour
1/2 tsp baking powder
pinch salt
60ml/ 1/4 cup whole milk
1 tsp vanilla extract

For the strawberries and cream –
150ml/ 1/4 pint/ 3/4 cup double cream/ heavy cream
1 tsp vanilla extract
1 tbsp sugar
handful of strawberries, hulled and thinly sliced

makes 2 layer cakes

Mini Strawberry and Cream Layer Cakes

To make the cake –
– Preheat the oven to 180Β°C/ 350Β°F/ gas mark 4 and light grease and 8″ cake tin.
– Whisk together the butter, sugar and egg until smooth and creamy.
– Fold in the flour, baking powder and salt.
– Whisk in the milk and vanilla.
– Spoon the mixture into the cake tin and smooth out evenly.
– Bake for approximately 20 minutes until golden brown and slightly risen.
– Leave to cool completely before cutting out 6 evenly sized circles with a small cookie cutter or shot glass.

To make the filling and topping –
– Whisk together the cream, vanilla and sugar until soft peaks form.
– Spread generous layers of cream, topped with sliced strawberries in between each layer. Top with piped whipped cream.
