Lemon bars studded with fresh raspberries ~
I’m so in love with these bars, to me they taste like the perfect spring time treat! They have a sweet shortbread base and a tart, zesty lemon layer bursting with raspberries. These are one of my favourite things I’ve baked recently, so if you try making them I would love to know how you get on.
Vanilla sponge cake filled with chantilly cream and fresh strawberries ~
These mini layer cakes are perfectly proportioned for two and are pretty easy and quick to make (they also taste totally delicious!) You start off with a simple vanilla sponge recipe cooked in a one layer cake tin. Then simply cut the sponge into circles (I used the bottom of a shot glass) and fill with freshly whipped vanilla cream and sliced strawberries. Any left over bits of sponge could be used to make mini trifles (recipe coming soon!)
